Ok while I love tuna salad, mayonnaise has the tendency to give me the heebie-jeebies 😂 SO I finally perfected this mayo-free tuna salad that has the perfect amount of creaminess and crunch with a hint of sweetness courtesy of the secret (but not so secret anymore) ingredient... POMEGRANATE SEEDS.
What you'll need:
1 can of tuna (I much prefer the Safe Catch brand as they test all of their tuna for mercury toxicity)
1 ripe avocado
1 large stalk of celery
4 fresh green beans
1 tbsp of diced yellow onion
1 heaped tbsp of pomegranate seeds
Juice of 1/2 of a lemon
Pink Himalayan salt & pepper to taste
Let's get to it!
Drain the can of tuna and place into a medium-sized bowl
Cut the avocado in half, add both halves to the bowl of tuna, and get to mashin'
Squeeze the juice of 1 lemon into the bowl
Chop up your celery & fresh green beans; Dice your onion
Fold veggies and pomegranate seeds into the tuna/avo mixture
