PALEO Soft Bake Chocolate Banana Tahini Cookies

TGIF, ya'll! Starting off my weekend with a few of these sweet treats. They're super simple to make (about 5 minutes prep and 15 minutes baking) and have such a great, soft-bake texture. Paleo or not, you will LOVE these cookies- I'm sure of it.

What you'll need:

1 very ripe banana

1 egg

1 tbsp of chocolate tahini (I used the Soom Foods brand- if you can't find that, you can sub 1 tbsp of tahini with 1 tsp of coconut sugar and 1 tsp of cocoa powder. If you don't want any added sugar, you can just add the tahini and cocoa powder.)

2/3 cup of almond flour

1/2 tsp of baking soda

Celtic sea salt to taste

Let's get to it!

Pre-heat the oven to 350 degrees Fahrenheit.

In a medium sized bowl, mash banana with a fork or masher and mix in a pre-whisked egg along with the chocolate tahini. Once well-mixed, add in the almond flour and baking soda.

Scoop the mixture onto a pre-greased baking sheet (this recipe makes about 7 medium-sized cookies).

Sprinkle the tops of the cookies with some Celtic sea salt to taste.

Bake for 15 minutes. They are done when the bottoms are browning and a toothpick comes out clean after poking into the cookie.
